Guys, I have a confession.

I LOVE carbs. Like “I Do” forever and ever type of love. I feel like carbs kind of get a bad wrap but I have the unpopular opinion of the more the merrier. The thing about carbs is that we need them! Yes, an excess of carbs can do the body harm but guess what? So can everything else that you have in excess.

For me personally, I thrive off a higher carbohydrate diet. I rather give up fats than give up bread. GASP! I know…. unpopular opinion. There is just something about them that make my heart happy, as well as my head and entire body.

So now that I’m done confessing (sheesh girl, find a church) let me bring you this low carb waffle.

Yeah, I see the irony. Don’t worry peeps! I’m here to clear up any confusion. You see all those wonderful toppings? I make sure that this meal is completely balanced! It has high protein (+20 grams), fats and topped with all the carbs. My heart, belly and mind are all happy here.

I’m not going to tell you how to eat but I will ask you to not fear carbs. They’re delicious, I promise!

5-Ingredient Low Carb Waffle

Everyone needs a staple waffle recipe! This one has the perfect balance of protein and healthy fats while being lower in carbs.... for more toppings, DUH!

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes
Servings 1 waffle

Ingredients

  • 1 egg + 1 Egg White
  • 2 tbsp Almond Milk
  • 2 tbsp Coconut Flour
  • 2 tbsp Nuzest Just Natural Protein Powder
  • 1/2 tsp Baking Powder
  • 1/2 tsp Cinnamon (optional)
  • Sweetener to Taste *I didn't use any!

Instructions

  1. While your waffle iron is preheating, whisk all the ingredients together.

  2. Let the batter sit for 5-10 minutes before spraying the waffle iron heavily with nonstick cooking spray. Pour the batter into the center of the iron and spread out evenly with a spatula.

  3. Let the batter set for 30-60 seconds before closing the lid. This ensures the waffle will stay nice and fluffy!

  4. Let the waffle cook for 5-7 minutes before topping with whatever you'd like and enjoying!

    • Hi Taylor! You could try using 2 flax eggs instead of the regular eggs but I haven’t tested it that way yet. If you do try, let me know how it goes!
