Don’t call the gross police just yet… these brownies don’t taste like beets at all! They are moist (sorry) fudge filled bites of delicious. Scouts honor.
I added a little bit of beet powdered to the peanut butter swirl on top for some added nutrition and well… because it’s Valentine’s Day and pink is just necessary.
These brownies are RICH. Like drink a glass of milk (dairy-free of course) with the and enjoy the smooth fudgey texture as you enter a state of pure bliss kind of rich.
If you aren’t into dark chocolate…. maybe stay clear? My daughter calls these brownies adult brownies.
NOT because they’re rated R mmk?? Just because their dark rich flavor is a little advanced for her taste buds. What does a six year old know anyway!
The trick with these brownies is to not over cook them AND to let them cool completely before cutting into them. Don’t be like me. I cut into them while they were still warm and they crumbled all over.

Fudgey peanut butter brownies with a veggie twist!

Ingredients
2tbspGround Flaxseed
6tbspWater
1/2cupPeanut Butter+ more for toppings
1/2cupCoconut Oilmelted and cooled
2/3cupCoconut Sugar
1tspGround Coffee (or instant coffee)
3/4cupUnsweetened Cocoa Powder
1tspVanilla Extract
1/2barDairy-Free Chocolatechopped
2tspSuncore Beet Powder
Instructions
In your mixing bowl, stir together the flaxseed and the water. Let it sit for 15 minutes.
Preheat your oven to 350 degrees F. Grease a 9×5 loaf pan and set aside.
After the 15 minutes, whisk together the flax egg with the peanut butter, coconut oil and coconut sugar until light and fluffy. About 2 minutes.
Fold in the rest of the ingredients except for the chocolate bar and beet powder. The batter will be REAL thick!
Pour the batter into your prepared baking pan and press it down with your hands or a spatula to form an even layer.
In a small bowl- stir together a couple tbsp of pb (2-3) with the 2 tsp of beet powder. Drop dollops of the mixture onto the brownies batter and swirl it around to combine it will the batter.
Bake for 30 minutes before letting is cool COMPLETELY in the pan- yes, wait the hour and thank me.

I have a confession…. I think yogurt is repulsive. Truly. I was never one to eat it as a kid but you know how they say you have to taste something at least 7 times before your taste buds will change? Yeah, I’ve tasted it 7 times and my taste buds still aren’t a fan.
Over the years I have learned a few things, yogurt by itself is yuuuuuuuuck (personal preference obvs) BUT yogurt with toppings?! DELICIOUS! All you have to do is load that sucker up and I am game for some nasty yogurt. So game that I’d even venture to say I like it.
SAY WHAT?
I know, I know… I’m surprised too. I wouldn’t say that I want it everyday but these parfaits have become a weekly thing in my household.
I like them because you can make them days in advance and they are still tasty AF. I’m all about simple because I don’t know if you know this….. kids are freaking hard and I’m slowly but surely growing my own soccer team.
Like WHY? I fully blame Cody. What you can’t blame him for is these 3-ingredients masterpiece of a breakfast, snack or dessert. It works for all three!
I used one of my favorite berries as the base- strawberries. Next came the yogurt- I chose to use So Delicious dairy-free yogurt because yum but use whatever yogurt fits your fancy. After that- a crumbled up Soozy’s Double Chocolate Muffin.
Secret time? The first time I made this it was with blueberries and a blueberries Soozy’s muffin. JUST AS DELICIOUS. Bananas with a sweet potato muffin would be bomb also. Just sayin’.
DATS IT FOLKS. Pop it into your fridge and enjoy it within 3 days. Perfect for a meal prepped breakfast on the go!

These energy bites can be whipped up in less than 5 minutes and are TOO DIE FOR. Yes, I’m being dramatic. Is that really anything new? NOPE.
Really though, there’s not much to say about them other than that they are perfect to customize to your liking. I love how simple this recipe is, it reminds me of what use to be my Dad’s favorite snack… Nature Valley Granola Bars. Still to this day, those suckers are delicious.
Instead of eating those processed bars full of not-so-great for you deliciousness, I suggest eating these. Same taste… just, better for you ingredients.
These energy bites have a pretty strong honey taste which I’m low key obsessed with. Adding in dried apples, apricots, strawberries or even bananas would be amazing add-ins with the honey! You could add in coconut, flaxseeds, pecans or almonds. Honestly, the options are endless.
I chose to keep these energy bites lower in fat because I created this recipe for one of my Time To Wake Up clients (specific dietary needs- yes, I customize plans for YOU) BUT adding in a little more fat in addition to the high protein would keep you fuller for a little longer. That’s why I rolled them in my three toppings of choice: coconut, flax and hemp seeds!
Whatever you choose to do… I’m sure they’ll be DELICIOUS!
Lastly, I used my favorite vegan protein powder- Nuzest “Just Natural”. I haven’t tested this recipe with any other protein powder but I would be interested to see how they turn out!
