These baked oats have been a hit in my household and I know they’ll be a hit in yours as well! There really isn’t much to say about them since they kind of speak for themselves…

All jokes aside, you really only need a few ingredients for this recipe and it is so adaptable to whatever you have on hand! You can swap out the blueberries for blackberries or the strawberries for raspberries. You could even get a little cray and ditch the whole berry idea by adding pecans and peaches…

Berrylicious Baked Oats
A high protein and berry filled baked oat recipe with minimal ingredients!
- 2 cups Frozen Riced Cauliflower *slightly defrosted
- 1 1/2 cups GF Oats
- 1 cup Almond Milk
- 1/2 cup Egg Whites
- 1 whole Egg
- 3 tbsp Nut or Seed Butter
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/4 tsp Nutmeg
- 2 tbsp Coconut Sugar *optional- I didn't use!
- 1-1 1/2 cup Berries of choice I used blueberries and strawberries
preheat your oven to 350 degress F. Spray or grease a baking dish ( I used a 9 inch cast iron) with oil.
In a medium size bowl, stir together all the ingredients listed.
Pour the oats mixture into your greased baking dish and bake for 35-40 minutes or until a toothpick comes out clean.
Top with more berries and a drizzle of peanut butter… or whatever you'd like!
