I had the hardest time picking the name for these bars. Seriously.
Don’t judge me. You try to pick a name for something that is both cake like and granola bar like. I dare you.
It’s pretty impossible okay!?
I digress… regardless what they’re called- I can tell you they are PACKED with protein, starchy carbs and healthy fats. They’re low on sugar and high in satisfaction.
Alright, I should probably leave that last part up to you to decide but I was highly satisfied so it’s still facts. Facts are facts people.
You will love these bars. FACT.
I added in coconut flakes, pumpkin seeds and mini chocolate chips along with the oats to really give it a trail mix feel but tried fruit would be amazing in these too!! Like with everything I make, these bars can be customized to your liking!
So what makes these bars high in protein? Well, along with the pumpkin seeds (which are full of healthy fats and protein), I used chickpea flour. To me, chickpea flour is the holy grail of all flours. It’s grain-free, gluten-free and in only 1/4 cup of flour- it has 7 grams of protein. That’s pretty dang impressive.
Now if you wanted to amp up the protein even more, you could easily add in a couple scoops of collagen to the mix.

Breakfast Trail Mix Bars
The best grab and go breakfast packed full of protein and healthy fats!
- 6 tbsp Peanut Butter
- 6 tbsp Honey
- 1/2 large Banana
- 1 whole Eggs sub flaxegg for vegan version
- 1 tsp Vanilla
- 1 cup Chickpea Flour
- 1 1/2 cup Old Fashion Oats
- 1 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 1/4 cup Shredded Coconut
- 1/4 cup Pumpkin Seeds
- 1/4 cup Mini Chocolate Chips
Preheat your oven to 350 degrees F. Line an 8×8 baking dish (see notes!) with parchment paper and set aside.
In a large mixing bowl whisk together the peanut butter, honey, banana, eggs and vanilla.
Add in the dry ingredients except for the coconut, pumpkin seeds and chocolate chips. Whisk until the ingredients are incorporated before stirring in the rest of the ingredients.
Pour the batter into your prepared baking dish and bake for 30 minutes. Let them cool completely before cutting.
I made mine in an 8×8 but honestly wish I would have made the in a 9×13 so that they could be less cake like and more bar like. If you choose to use a 9×13- I’d cut the time in half and keep and eye on them! Either way- they are delicious!
