Cinnamon Apple Tahini Crumble Bars

These bars? Apple pie but BETTER.

Zero regret with that bold statement! These darling little bars are sweetened with a natural sweeter… date syrup. I was skeptical at first but now I am converted. It has lower sugar than honey and you only need a tbsp or two to sweeten an entire dish! This recipe specifically only has 3 grams of sugar per serving.

Along side the date syrup, I decided to keep these bars nut butter free. Instead, I went with tahini and sunflower seeds. Seed cycling (or seed rotating) is a trendy topic in the health world because it focus on the female hormonal health. Essentially it is used to boost estrogen and progesterone levels. Each phase is specific to where you are in your cycle. The first part (follicular phase) is used to boost estrogen levels. The second part (luteal phase) is used to boost progesterone.

This is done by…seed cycling! I’m sure you could see where I was going. I could (and maybe should?) do a whole lifestyle post on seed cycling but right now I will tell you that by eating just a tbsp each of flax/pumpkin seeds or sesame/sunflower seeds, you reap the benefits.

If you are in your luteal phase, these bars have you covered! They are packed with sunflower seeds and tahini (sesame seed ‘butter’). I made these bars the day after my ‘second phase’ and have had one bar every day since!

Ingredients

  • 1 medium Apple peeled and finally chopped
  • 1 tbsp Tapioca Flour
  • 1 tbsp D'vash Date Syrup
  • 1 cup Gluten-Free Oatmeal
  • 3/4 cup Almond Flour
  • 1/3 cup Sunflower Seeds
  • 3 tbsp Tahini
  • 1/4 cup Coconut Oil melted
  • 1 tbsp D'vash Date Syrup
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Cinnamon Powder
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 350 degrees F. Line a 8x8 baking dish with parchment paper and set aside.

  2. In a small bowl, mix together the finely chopped apples with the tapioca flour and 1 tbsp of date syrup. Set the bowl aside to allow the apples to soak up the mixture.

  3. In a large mixing bowl, combine the rest of the ingredients making sure to stir until completely combined. 

  4. Take roughly 2/3 of the oat mixture and press it firmly into the 8x8 baking dish. 

  5. Spread the seasoned apples evenly on top of the pressed oats. Crumble the remaining oats on top of the apples. 

  6. Using your hands, gently press the top of the crumble to ensure everything sticks together nicely.

  7. Bake for 33-37 minutes, allowing the top of the crumble to get golden brown. 

  8. Allow the crumble to cool completely before removing it from the baking dish. 

  9. Slice into 12-16 squares and enjoy!
