I will fully admit that I’ve been on the struggle bus when it comes to creating a brownie recipe that is gluten-free, dairy-free AND freaking delicious. I’m slightly embarrassed to admit that I’ve tested no less than 10 brownie recipes. Each time I tested a new one they all ended up tasting like dirt, having the texture of dirt or a combination of both. #justkeepingitreal
The good news is that my losing streak with brownies has COME TO AN END!!
*insert clapping emoji* (or please don’t) These beauties not only taste fantastic while being gluten/dairy-free BUT they are also packed health boosting ingredients like collagen and reishi mushroom.
If you are new to reishi mushroom- do your own research!! I’m not here to sell you on different supplements, adaptogens or super foods but I will tell you that I personally love to add reishi mushroom into my diet for immune boosting support. WINNING.
Since I take collagen on the daily (sometimes multiple times per day), I was extremely excited to learn that Further Food came out with a new product- Chocolate Collagen Peptides with Reishi Mushroom– SAY WHAT? Yes, it’s a real thing. A real good thing at that. I love this collagen because it’s full of chocolate deliciousness without having any added gums, flavorings, stevia, or ingredients you can’t pronounce.
Essentially I would have been crazy to not add it into these brownies, you know?
So, all in all I might have gone a little crazy with the toppings but the brownies would be amazing without them too! Sometimes you just really need a plain brownie recipe and this one will absolutely do the trick.

Double Chocolate Brownies
Easy one bowl brownies that are GF, DF and full of nutritional super foods!
- 1 1/2 cups Almond Flour
- 1/4 cup Unsweetened Cocoa Powder
- 2 servings Further Food Chocolate Collagen Peptides w/ Reishi Mushroom
- 1/4 tsp Baking Soda
- 1/4 tsp Salt
- 1 cup Coconut Sugar //alt. use reg sugar or sugar alternative
- 3 tbsp Coconut Oil melted
- 1 tsp Vanilla Extract
- 2 large Whole Eggs
- 2 tbsp Dairy-Free Milk
- 1/4 cup Dairy-Free Chocolate Chips optional
- 8-12 whole Pretzels optional
- 2-4 tbsp Peanut Butter optional
Preheat your oven to 350 degrees F. Spray an 8×8 baking dish with cooking spray and set aside.
In a large bowl, whisk together the coconut sugar, vanilla extract and melted coconut oil until the sugar is completely coated.
Add in the almond flour, cocoa powder, chocolate collagen, baking soda and salt. Stir until the dry mixture is incorporated into the wet.
Add in the eggs and the 2 tbsp of dairy-free milk. Stir until just barely combined being careful not to over mix. (the dough will be thick!)
Pour the batter into your prepared baking dish. Press the batter down (use a spatula or your hands) until the batter is a nice even layer.
Top with the toppings (if using) before placing it in the oven to bake for 22-25 minutes. The brownies will not look done but they will continue to set up while cooling.
Let the brownies cool completely in their baking dish before cutting and enjoying!
