Honey PB Banana Bread

For as long as I can remember my favorite childhood snack was a piece of plain ‘ole white bread spread with a thick layer of crunchy peanut butter topped with half a banana, a drizzle of honey and a sprinkle of cinnamon.

This bread is my childhood snack transformed into one incredibly satisfying banana bead. I’m not at all embarrassed to admit that within an hour of it being out of the oven, it was nearly half way gone. We devoured it and aside from our bellies being happy, our hearts were as well.

You know those recipes that just make you feel comforted? This Honey PB Banana Bread is it for me. So many memories flooded back from when I was little and I knew this bread was just more than food, it was medicine for my soul.

Ingredients

  • 3 medium Bananas mashed
  • 2 whole Eggs
  • 1/2 cup Peanut Butter
  • 3 tbsp Honey
  • 1 tsp Vanilla Extract
  • 1 3/4 cup Almond Flour
  • 1 tsp Baking Powder
  • 1 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Salt

Instructions

  1. Preheat the oven 350 degrees F. Grease a bread loaf pan with coconut oil or line it with parchment paper and set aside.

  2. In a big mixing bowl, whisk together all of the wet ingredients until well combined and slightly fluffy. About 1-2 minutes.

  3. Incorporate the dry ingredients into the wet mixture and whisk together for an additional 1-2 minutes.

  4. Pour the batter into the prepared bread pan and top it with optional dollops of peanut butter and sprinkle of cinnamon. (I used an additional 4-5 tbsp of peanut butter and 1/2 tsp of cinnamon. Completely optional but not really!)

  5. Bake for 45 minutes or until the center is no longer doughy. 

  6. Let cool completely before slicing it up!
