Sometimes you just really need a cookie, right? I don’t think there anything a little chocolate cannot fix! Studies actually show that eating a small bit of dark chocolate can boost your mood. Along with the added macadamia nuts and coconut… well, these cookies are practically like taking a multi-vitamin.

Macadamia nuts are a great source for Vitamin A, iron, protein, thiamin, riboflavin, niacin, and folates.  Coconuts have you set for a lot of the Vitamin B family including B6. B6 is responsible for so many things. The cliff notes are that B6 can aide in healthier skin, detoxifying the liver, improving cognitive function, relieving mood swings (us ladies need all the help we can get in that area)… essential B6 is the beez neez.

And so are these cookies!

*The holistic nutritionist in me is cringing at the thought of someone actually replacing their vitamins with these cookies. I mean, I’m good but I’m not that good okay?

Maca(Damn)ia Dark Chocolate Cookies

Ingredients

  • 1 Ripe Banana
  • 1 whole Egg
  • 1/2 tbsp Vanilla Extract
  • 3 tbsp Coconut Oil melted & cooled
  • 11/4 cup Almond Flour
  • 3 tbsp Coconut Flour
  • 1/4 tsp Salt
  • 1 tsp Baking Soda
  • 4 squares 72% Dark Chocolate //alt chocolate chips
  • 1/2 cup Macadamia Nuts chopped
  • 1/4 cup Unsweetened Flakes Coconut chopped

Instructions

  1. Preheat you oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat.

  2. Combine all the wet ingredients together with a hand held or standing mixer until well combined.

  3. Add the dry ingredients into the wet leaving out the chocolate, macadamia nuts and coconut flakes. 

  4. Once the dry ingredients are combined with the wet, hand stir the macadamia nuts and coconut flakes into the dough. 

  5. Using your hands or an ice cream scoop, form 16 cookies and lightly flatten them with your fingers.

  6. Chop the 4 chocolate squares into 16 pieces placing one piece on each cookie.

  7. Bake for 9 minutes and enjoy!
