Clouds. Straight pillow clouds. That’s all I have to say about these luscious cookies.
I guess I could mention that they are made from real deal ingredients, barely any sugar and minimal fat buuuut that’s a whole lot of blah blah blah.
I had set out to make baked oatmeal but somehow ended up with these breakfast cookies. I’m really zero mad about it. They are perfect for an on-the-go meal and I’m all about convenience eating!
Let’s be real, I’m about eating in general.
The great thing about these cookies is how many variations and add-ins you could have! Pecans would be great with this recipes. Swap out the apple sauce for pumpkin puree and ditch the apples for marshmallows.
Yes, yes a went there.
You could even make this a seed cookie to get in those essential Omega-3s. Just simple swap out 1/4 cup of the oats for flax seeds or hemp seeds Actually, fun fact time! Did you know that hemp seeds are not only high in Omega-3s but they have a complete amino acid profile? Most plant-based protein sources can’t actually claim that!

Vegan Apple Oatmeal Cookies
Sugar, spice and everything nice was referring to these cookies
- 1/4 cup Unsweetened Apple Sauce
- 3 tbsp Coconut Oil melted and cooled
- 1 tsp Vanilla Extract
- 2 tbsp Coconut Sugar
- 1 cup Almond Flour
- 3/4 cup GF Oats
- 1 1/2 tsp Cinnamon
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Apple peeled and chopped
Preheat your oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
In a large bowl, whisk together the first four ingredients.
Add all the ingredients expect for the apples. Stir until just combined. Fold in the apples.
Using a small ice cream scoop or spoon, scoop out the dough onto your prepared baking sheet. I got about 8 cookies.
Bake for 12-14 minutes or until the cookies are no longer doughy.
Let cool completely on the baking sheet before enjoying!
