Vegan Cinnamon Date Nice Cream

I wasn’t originally going to post a recipe for this BUT I had some many people request it that I figured the recipe needed a home. The picture makes it look complicated but it really is SO easy.

Here’s what you’ll need:
-Frozen Riced Cauliflower
-Frozen Banana
-Diary-Free Milk
-Cinnamon
-Chocolate Chip Cookie of choice ( I used one of my Damn Good Chocolate Chip Cookies simply because they’re damn good)
-Coconut Whipped Cream (you can now find a can of almond or coconut whipped cream in your grocery store! It’s next to the milk. It does have some questionable ingredients so if you’d like a cleaner option, I’d recommend using Minimalist Baker’s recipe!
-D’vash Date Nectar (Don’t skip this one! It gives the nice cream an almost caramel flavor that is too dang good!

That’s it! If you have all the ingredients at the ready, it can come together in just minutes.

Vegan Cinnamon Date Nice Cream

Super simple and DELICIOUS vegan ice cream that comes together in minutes

Ingredients

  • 1 1/2 cup Frozen Riced Cauliflower
  • 1 medium Frozen Banana
  • 1 cup Dairy-Free Milk
  • 1/2 tsp Cinnamon
  • 1/2 tbsp D’vash Date Syrup + extra for drizzle
  • Dairy-Free Whipped Cream * See above notes
  • 1 Damn Good Chocolate Chip Cookie *See above notes

Instructions

  1. In your high-speed blender, blend together the first 5 ingredients until completely blended. You will have to stop occasionally and scrape down the sides as it will be THICK.

  2. Pour the ice cream into a bowl and freeze (10 minutes) for a thicker texture or eat right away for a milkshake texture.

  3. Top with whipped cream, a cookie, and more date syrup
