These gluten-free, vegan and low sugar bars are the perfect sweet and savory treat!
Preheat your oven to 350 degrees F. Line a 8x8 baking dish with parchment paper and set aside.
In a small bowl, mix together the finely chopped apples with the tapioca flour and 1 tbsp of date syrup. Set the bowl aside to allow the apples to soak up the mixture.
In a large mixing bowl, combine the rest of the ingredients making sure to stir until completely combined.
Take roughly 2/3 of the oat mixture and press it firmly into the 8x8 baking dish.
Spread the seasoned apples evenly on top of the pressed oats. Crumble the remaining oats on top of the apples.
Using your hands, gently press the top of the crumble to ensure everything sticks together nicely.
Bake for 33-37 minutes, allowing the top of the crumble to get golden brown.
Allow the crumble to cool completely before removing it from the baking dish.
Slice into 12-16 squares and enjoy!
